Looking for something to do with leftover pulled pork and mashed potatoes, here’s a breakfast that will get everyone to the table on time.

Let’s Make it

INGREDIENTS:

  • leftover pulled pork
  • leftover mashed potatoes
  • 2 eggs
  • bacon grease or butter

OPTIONAL:

  • 1 avocado
  • 1 jalapeno
  • cilantro for garnish
  • hot sauce

DIRECTIONS:

  1. Heat a pan to medium-high heat and toss in some bacon grease or butter and let that melt. Put in your leftover mashed potatoes and flatten them out a little bit with the back of the spatula or a spoon. Let the potatoes sit till you see a crispy edge around them; they should release themselves from the pan when they’re ready to flip. After flipping it over again, wait for the crispy edge before removing it from the pan and placing it on a plate.
  2. Add a little more grease or butter to the pan, cook your eggs to your liking, and put them on the plate.
  3. Toss the leftover pulled pork in the pan and reheat it; adding a little water will help steam the pork, heating it quicker. Once the pork is heated, place it on the eggs.
  4. Enjoy some avocado slices, jalapeno rings, and hot sauce with your breakfast.
