  • 2 tablespoons tomato paste
  • 2 cups chicken or vegetable broth
  • 1/2 teaspoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 bay leaf
  • 1/2 cup sliced smoked sausage or cooked chicken (optional)
  • 1/2 cup cooked shrimp (optional)
  • 1/2 cup crispy fried okra snacks
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

DIRECTIONS:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables start to soften.
