When you have a head of lettuce in there from the hamburgers you had the night before, this is a great way to use that up. Add a little protein with the marinated steak tips, and you can satisfy anyone relatively quickly.

Let’s Make it

INGREDIENTS:

  • 1 flank steak, cut into 1-inch cubes
  • 1 small head of iceberg lettuce
  • 2 strips of bacon
  • 1 shallot
  • some cherry tomatoes, halved
  • few cucumber slices
  • blue cheese dressing
  • blue cheese crumbles

MARINADE:

  • 3 tbsp. soy sauce
  • 1 tbsp. worcestershire
  • 1 tsp. balsamic vinegar
  • 1 tsp. honey
  • 1/2 tsp. garlic powder
  • 1/2 tbsp. olive oil
  • salt & pepper
  • 1 tsp. mirin or cooking wine (optional)
  • 1/4 c. water

DIRECTIONS:

  1. Cut the flank steak into 1-inch cubes and place them in a container with the marinade ingredients. Be sure to cover them completely. Massage the cubes while in the marinade for a few seconds; the total time marinating should be about 20 to 30 minutes.
  2. Sear the steak tips on all sides over medium-high heat until the internal temperature reaches medium-rare or is done to your liking.
  3. While the steak tips are cooking, make your salad by cutting a small head of lettuce into quarters and dressing it with salad dressing before adding tomatoes, onions, cucumber slices, blue cheese crumbles, and bacon pieces.
  4. Once the steak tips are cooked, place them on the plate with the salad.

Give it a shot and let me know how it was.
