This is just like mom used to make (maybe not), except she didn’t like spicy food and probably only used one type of chili powder, but this is a recipe you’ll want to make again and again. It’s perfect for a weeknight meal because it can be put together in minutes.
It’s so full of flavor that if the neighbors find out what you’re doing, they will be coming over to get a bowl, so you better make a double batch!
Let’s Make it
INGREDIENTS:
- 2 (10 oz.) fire roasted diced tomatoes
- 1 large can roasted hatch green chilis (or 1 roasted poblano diced)
- 1 (15 oz) can tomato sauce
- 5 slices bacon (optional)
- 2 lbs ground beef lean (turkey can be used as well)
- 1 can chipotle peppers in adobo sauce seeded with sauce (minced) (or 2- jalapeno peppers seeded)
- 1 green bell pepper
- 1 red bell pepper
- 1 large yellow onion chopped
- 4 large garlic cloves (minced)
- 2 tsp. salt (adjust to taste)
- 2 tsp. dried oregano
- 1/4 tsp. cayenne pepper
- 1 tsp. black ground pepper
- 4 bay leaves
- 2 tbsp. chili powder
- 2 tbsp. ancho chili powder
- 1 tbsp. paprika
- 1 tbsp. smoked paprika
- 1 tbsp. cumin
- bit of olive oil
OPTIONAL:
- sour cream
- shredded cheddar cheese
- green onion
- fritos
DIRECTIONS:
- Get a good-sized pot out, put some olive oil in it, and brown the beef.
- Toss in all the spices and stir to combine; let it sit for a minute or two so that the spices bloom.
- Put in your peppers and onions and cook them with the meat for a few minutes, until the onions start to soften.
- Put in the tomatoes and chilies, as well as the adobo chili and sauce (take it easy here; it can get spicy quickly; a little at a time is probably best until you get the spice level you want).
- Allow everything to cook together for about an hour, or until you can’t stop yourself from topping it with cheese, sour cream, or one of my favorites, Fritos!
